Memorial Day has always been such a fun family day for us growing up. We always went to the best little swimming hole in Texas called "Lake Tejas" and spent the weekend camping, boating, fishing, throwing each other off the docks and having a few BBQ's. Just an all around chill weekend celebration. Now...it has now been turned into a yard work day and maybe a little BBQ in the evening type situation. (oh the joys of being an adult)
I think its important to acknowledge what the holiday is really about. To honor those who have given their lives for our country. Actual human beings who have died for and fought for our country. It was actually known as Decoration Day up until the 1970's but has been celebrated since the 1870's. I had no clue it was celebrated for that long!
So I'm going to try and teach my kids a little bit about the holiday and maybe do an activity or two with them. And THEEEENN, have a BBQ. Hahaha.
This is a recipe I have always loved since I was younger. My mom made it for occasions and its the perfect additional to any BBQ or summer get together to bring. The dressing is where the magic is for sure!
STRAWBERRY CHICKEN SPINACH SALAD
***Feeds 6-8 people. 20 min prep-time.
8 oz spinach leaves ( I like mine chopped up a little bit)
1 - 1.5 cups of sliced strawberries (to taste)
1/3 cup thinly sliced red onion
1/4 cup sliced almonds
1 cup chopped cucumber
1/3 cup of craisins (optional)
Grilled chicken (if you want to make it a heartier meal option)
DRESSING
1/2 cups avocado oil (can use light tasting olive oil or canola oil)
1/4 cup honey
1/4 tsp red wine vinegar
1/4 tsp. paprika
2 tsp sesame seeds
1 tsp poppy seeds
Chop up and gather all salad ingredients. Combine the dressing ingredients and mix/shake well. If too thick all a little water.
Super easy and a crowd pleaser.
